The conference “Malta Antioxidants Valorization 2006” will take place in parallel to the “3rd International Conference on Polyphenols Applications in Nutrition and Health”
Aims of Malta Antioxidants Valorization 2006 :
Produced in tones per day, fruits and vegetables wastes and by-products represent a problem for management, pollution and ecology and environmental issue. These by-products and wastes are very rich in bioactive substances which are considered to have a beneficial effect on health. Since last decade, effort had been made to improve methods and ways to re-use wastes from fruits and vegetables industries. But of many efforts still remain to make. The purpose of this conference on antioxidants and polyphenols valorisation from fruits and vegetables wastes is to highlight and discuss about:
the environmental and economic issues
the interest of plants by-products as a high source of antioxidants
the methods to extract the natural antioxidants from by-products
the interest of natural antioxidants compare to synthetic in terms of consumer acceptance, legal needs for market access, toxicity and thermal stability
Applications in functional food, food supplement and cosmetic
Marketing and perspectives of uses of natural antioxidants from fruits and vegetables wastes
